Last night we had another vegetarian dinner (not vegan). Stuffed peppers! YUMMO. They were another recipe on the "winner!" list.

Seeing as how I usually only vaguely follow recipes and don't measure anything too closely unless I'm baking, here's my memory of the recipe:

Ingredients:
  1. 1 onion, chopped
  2. 1 zucchini, chopped (it said shredded, but we packed our grater)
  3. 2 medium carrots, chopped (again with the shredding...)
  4. 1 T. minced garlic
  5. 1/2 can of tomato sauce (8oz, -ish)
  6. 4 bell peppers (I used two green and two red)
  7. 1.5 c. cooked basmati rice
  8. Chopped fresh basil to taste
  9. Salt and Pepper to taste
  10. Olive oil for sauteing
  11. Italian cheese (recipe called for asiago and parmesan. We used mozzarella and paremesan.)
Directions:
  1. Wash, core, and cut in half the peppers. Place them cut-side down on a baking sheet, spray lightly with olive oil or cooking spray, and put under the broiler for about 5 minutes. Then turn them over, and broil the other side for about 5 minutes.
  2. While that's happening, saute the onion for a couple of minutes, then mix in the garlic, zucchini and carrots. Saute it all together for about 5 minutes, then mix the already-cooked-rice into the pan.
  3. Toss the basil, a good handful of cheese (maybe 3/4 c.? use your judgment), and sauce in the pan with the veggies, and heat it until warm.
  4. Take the peppers out, and turn the oven on to 350. Divide the rice/veggie mixture into the peppers, and sprinkle a little more cheese on top. Bake for about 25 minutes.
Pretty easy, and VERY VERY good. Jason loved it, too, so we have another winning vegetarian dish!
