Tonight's dinner was delish! Grilled pizza with asparagus, chives, and sun-dried tomatoes. Dough and everything cooked on the grill :)
It was easy!
Pizza dough:
3 c. all-purpose flour
1 packet quick yeast
1 t. salt
2 T. oil
1 c. water
Mix the dry ingredients in a food processor, then add the oil and water. Add small bits of water/flour until the dough forms a ball that is only slightly sticky to the touch. Dump out the dough onto a lightly floured surface, and knead it into a ball. Put a bit more of the oil into a large bowl, turn the ball of dough around in it, then cover it with plastic wrap and let it rise for at least 30 minutes, up to 8 hours.
Toppings:
1 bunch asparagus, ends cut off
1 bunch chives, ends cut off
1 c. ricotta cheese
1/2 c. sliced sun-dried tomatoes
Toss the asparagus and chives in a large bowl with 2 T. sun-dried tomato oil, salt, and pepper. Put them on the grill for about 6 minutes, or until tender.
Roll or pull the dough into 2 ovals/circles/rectangles, and brush or coat both sides with some of the sun-dried tomato oil. Put the dough on the grill on high heat just until the bottom starts to toast, the flip it, letting the other side toast slightly (dough will not be done). Pull the crusts off of the grill, then spread the ricotta, chopped up grilled veggies, salt, pepper, and tomatoes on top. Put the pizzas back on the grill on low heat until the dough is cooked through/cheese is melted, about 7-8 minutes.
